This is a simple recipe for roasting bone marrow in the oven, perfect for serving on toast.

  • 4 beef marrow bones
  • salt
  • pepper
  • sourdough bread, toasted

Preheat oven to 180°C.

Sprinkle the bones with salt and pepper and bake in the oven for anywhere between 10–20 minutes, depending on their thickness. The marrow should start melting and bubbling around the edges slightly, but should not be sliding out of the bones.

Remove from the oven and scoop out onto toast, with a further sprinkling of salt and pepper. Serve with a zingy side salad.
