To celebrate Plastic Free July we’ve put together 5 jam jar marinades to go perfectly with our Helen Browning’s Organic BBQ Boxes. Alternatively, from the shop, you can buy the Organic Steak Seasoning, Organic Sweet and Smokey Rub, Organic BBQ Sauce or Organic Brown Sauce. These are all plastic free too! These recipes have being adapted from Gimme some Oven.

Cold Brew Marinade

  • 3/4 cup cold brew coffee
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon each: Dijon mustard and freshly-cracked black pepper
  • 1/2 teaspoon each: garlic powder and onion powder

Fajita Marinade

  • 1/3 cup lime juice
  • 1/3 cup pineapple juice
  • 2 tablespoons olive oil
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • salt and pepper

Korean Marinade

  • 1/2 cup Asian pear puree or juice
  • 1/4 cup low-sodium soy sauce 
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon each: garlic powder and ground ginger
  • optional: 1 teaspoon toasted sesame seeds, 1 tablespoon thinly-sliced scallions

Chimichurri Marinade

  • 1 cup fresh flat-leaf parsley, tightly packed
  • 1 cup fresh cilantro, tightly packed
  • 1/2 cup diced red onion
  • 3 Tablespoons fresh oregano
  • 3 cloves of garlic
  • 2 Tablespoons fresh lemon or lime juice
  • 2 Tablespoons red wine vinegar
  • ¼ tsp sea salt
  • ¼ tsp freshly-ground black pepper
  • ¼ tsp red pepper flakes, or more, to taste
  • ½ cup good-quality olive oil

Add all ingredients, except the olive oil, to a food processor, and pulse a few times until chopped.  Slowly add the olive oil, while pulsing the mixture a few more times until the olive oil is combined, and stopping to scrape down the sides of the food processor if needed.

Balsamic & Herb Marinade

  • 1/3 cup balsamic vinegar
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons finely-chopped fresh rosemary
  • 2 tablespoons olive oil
  • 2 teaspoons Dijon mustard
  • 1 teaspoon each: garlic powder and freshly-cracked black pepper
  • 1/2 teaspoon onion powder

Method

To make each marinade, simply put the ingredients together in a jam jar, screw the lid on tight and shake briskly until combined. Store marinade in the fridge until you are ready to pour over your steak. Cover and leave to marinate for 30mins at room temperature, or up to 24hrs in the fridge. So simple!
