Perfect for quick summer lunches when the kids are on holiday. Serves 4 and preparation time is 5 minutes.

Ingredients

  • 4 wholemeal pittas
  • 1/2 iceberg lettuce (washed and shredded)
  • 150g baby plum tomatoes (halved lengthways)
  • 1 packet of Helen Brownings Organic Ham
  • 100g cream cheese

Method

Place the pittas into a toaster and cook until golden. Leave the pittas to cool for a couple of minutes, then slice each in half. Be careful, they may still be a little hot when you open them. Spread the cream cheese evenly on the inside of the pitta. Fill each pitta half with the ham, tomato and lettuce. Serve with carrot and cucumber sticks and a spoonful of coleslaw for a colourful, healthy lunch.
