Layer good ham and a fried egg between slices of farmhouse bread, top with grated cheese. Grill with a little butter, and enjoy the audible crunch.

  • Butter
  • 1 large egg
  • 2 slices white bread
  • Sliced organic ham 
  • Grated cheese (Cheddar or Gruyère)

Heat a couple of teaspoons of butter in a small non-stick pan on medium heat. When the pan is hot and the butter foamy, crack the egg into the pan. 

Cook the egg until the whites are cooked and it is still somewhat runny in the yolk (or not runny at all if that’s what you prefer), and remove the egg from the pan to a plate and set aside.

Heat an oven proof cast iron pan on medium high heat. Spread some butter on one side of one slice of bread. Place the slice butter side down on the pan.

Add a generous layer of ham to the bread. Place the egg on the ham. Top with the second slice of bread.

Spread some butter over the top of the top slice of bread, top with grated cheese. When the bottom slice is nicely toasted, move pan with the sandwich to underneath a pre-heated hot grill. Toast until cheese is delightfully brown and bubbling. Enjoy.
