Whether for breakfast, lunch, or dinner, chorizo will add a delicious depth and warming kick to your meals. Cooking chorizo (also known as fresh) is raw and needs to be cooked. Remove casing before cooking. Generally it takes about 8-10 minutes for fresh chorizo to cook thoroughly, depending on how thickly you slice it.

Some years ago we travelled with a Spanish sausage working party (somebody had to do it) to a village called Trevelez near Granada. In amongst all the mainstream chorizo producers in the area, there was a small maker who was producing a chorizo a little differently. He used freshly ground sweet paprika and some fresh chilli and naturally smoked the chorizo. These little pieces of magic combined to make a very natural and extremely tasty product. This maker was the inspiration for our Organic Fresh Chilli Chorizo.
Our chorizo is made from high quality meat (shoulder, leg and belly) from organic British pork to give a really juicy texture. Combined with all that lovely sweet paprika, it produces excellent cooking juices in the pan. Amazing flavour for your paella, clams, mussels or whatever you are rustling up for dinner.
When in season we are also lucky enough to have fresh chillies from Riverford Organic. They are sweet and hot. We make a paste first and mix them into the recipe, giving the chorizo a lovely building warmth without being volcanically hot. Like our maker in Trevelez, we also naturally smoke our chorizo to finish it.
