Slice & Save
Buying a whole strip loin is not only a great way to save money but also allows you to manage the thickness of each steak.
- Unpack your strip and place it on a large work surface. Dry carefully with paper towels and dry the work surface to prevent the strip from slipping around.
- Place the strip with the fat cap down.
- Using a ruler, mark incision points with the tip of your knife to use as a guide when cutting steaks (we recommend one-and-a-half-inch incisions).
- Place the heel of your blade on the surface of the strip and draw your knife backwards while applying downward pressure. Continue to pull backwards and downwards until the tip of your blade comes through the meat. If you have to use multiple strokes to release the steak from the rest of the strip, completely lift your blade up, reset the heel, and pull backwards again. Do not push the blade forward while it is in contact with the meat at any point – a see-saw motion will not leave a clean edge.
- Pack into freezer bags and freeze for up to 3 months – ideal for a whole summer of perfect BBQ steaks.
