Grass-fed steak for tender, buttery eating.
With a deep flavour and generous marbling. Sirloin is leaner than ribeye, but still has a strip of fat across the cap. Cook fat edge-down in the pan to render out the fat so it can help baste the steak. Best cooked to medium rare and left to rest for five minutes before serving.
