A pork loin rack is a skilfully butchered loin taken from the middle of the pig. The same cut that makes back bacon or a pork chop. But we leave them as one big piece of meat and neatly trim the bones in a French trimmed style to create a lovely looking rack of pork.
Cook one on its own and slice into individual chops or join two or three together to make a show stopping pork crown as a sensational centre piece to your table.
We’ve left the rind on so you can make fabulous crackling too. The secret to great crackling is to ensure your rind is completely dry and has been out of its wrapping for at least 10 hours. Salt it well. Soggy skin makes soggy crackling.

This was an outstanding piece of pork. Roasted in the oven with the crackling finished off in the air fryer (I didn’t quite nail that first time around) it made for a beautiful centrepiece for our Christmas Eve dinner. So tasty and juicy and fed 6 of us amply.
