Cooking instructions Soak the gammon in cold water to remove some of the salt (optional). Discard the water. Place in a pot and cover with cold water, peppercorns and a bay leaf (or use veg stock). Bring to the boil, reduce the heat and simmer for 20 mins per 500g, plus 20 mins. Rest for 10-15 minutes before slicing. Alternative method: Oven roast – Wrap the joint in foil and place in a roasting dish. Roast at 180°C for 20 mins per 500g, plus 20 mins. For the last 20 minutes unwrap and glaze if you like.
