Description

Raw pork hock, also known as a pig’s knuckle, is a versatile cut best enjoyed when slow-cooked. Ideal for soups, stews, and braised meats where the slow cooking process allows the meat and connective tissue to break down, resulting in a tender, melt-in-your-mouth texture.

Helen Browning’s saddleback pigs are a slow-growing breed, renowned for the flavour of their meat. The herd is fed on a simple cereal diet alongside foraging organic herb-rich grass and surplus seasonal fruit and veg from Abel & Cole.
