Baked Aubergine
A deliciously spiced baked aubergine that would work equally well griddled on the BBQ. Serve with yoghurt raita or similar.
- 1 large aubergine
- 2 tbsp olive oil
- 2 tsp Steenbergs organic steak seasoning
Pre-heat the oven to 200C (180C fan).
Take the top off the aubergine and slice in half lengthways.
Make a crisscross pattern on the cut surface of both pieces and place onto a foil lined baking sheet.
Drizzle with olive oil and sprinkle liberally with Steak Seasoning.
Bake in the oven for 30 minutes.
