A light summer favorite perfect for summers evening meal. Using the Helen Browning’s Good Beef Sirloin Steak. Good Beef is a by-product from the organic dairy herd, with a much lower carbon footprint compared to standard beef. This recipe is adapted from Amanda from healthyfood.co.uk and the image from maxliving.com. This recipe will serve one person.
Ingredients
- 200g salad leaves
- 4 halved cherry tomatoes
- 10g pine nuts
- 1 Helen Browning’s Sirloin Steak
- 15g Pesto
- 10g Parmesan shavings
- 200g Boiled baby potatoes
- 1Tbsp of oil
Method
Place the salad leaves into a bowl with the cherry tomatoes and pine nuts. Warm up a frying pan with some oil in, then fry the steak for around 5 minutes, flipping the steak halfway. If you want the steak more well done cook for longer. Cut the steak into strips and place on top of the salad leaves. Make a dressing, by mixing the pesto with a little hot water. Drizzle the pesto dressing and parmesan shavings over the salad. Serve the salad with 200g of boiled potatoes. Enjoy! .
