Speedy Sausage Spooky Graveyard Casserole
We’ve borrowed some creepy Halloween ideas from Sainsbury’s (hopefully they don’t mind) for you to create for your Halloween parties. We think Helen’s Speedy Sausages will taste great in a spooky sausage graveyard! These take about 20 minutes prep time (45 mins to cook) and you can even get the children involved; see what ghoulish gravestones they come up with.
- 1 pack of Helen Browning’s Speedy Sausages
- 1 tbs olive oil
- 1 onion diced
- 1 celery stick diced
- 2 crushed garlic cloves
- 2 carrots diced
- 2 x 400g chopped tomatoes
- 1 tin of butter beans drained & rinsed
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 2 bay leaves
- 300ml chicken stock made with 1/2 stock cube
- 3 tortilla wraps
- 1 handful fresh flat-leaf parsley
Preheat the oven to 180°C/gas mark 6
Heat the oil in a large casserole pot. Gently brown the sausages for 5 minutes. Remove from the pan, then add the diced onion, celery and carrot and cook for 10 minutes until softened and golden. Add the garlic, chopped tomatoes, beans, paprika, oregano, bay leaves and chicken stock. Simmer for 30 minutes, then add back in the speedy sausages for 15 minutes until thickened.
Whilst the casserole is cooking, cut the tortillas into gravestone and cross shapes, each around 3-4 inches in height, and bake for 8-10 minutes until crisp. The kids will love this bit … once cooled write spooky words on the headstones with ketchup or mustard.
Once the stew has finished cooking, transfer it to a glass baking dish and remove the bay leaves, then sprinkle over the chopped parsley to look like grass. Arrange the tortilla crisps on top and serve.
This would be a real treat with a big bowl of mysterious evil mash and some ghoolish greens!
