Apple, Cider & Thyme Pork Belly with winter veg

Serves 2-6



Step 1

Cook the Pork Belly as instructed on the pack

Step 2

Toss the cooked cubed potatoes in olive oil, salt, pepper and thyme.  Spread on a small baking tray and pop in the oven with the pork.  Take out and turn occasionally

Step 3

Boil or steam the swede and carrots together.  Drain when cooked, season and mash.

Step 4

Boil or steam the brussel sprouts, then slice in half

Step 5

Remove the pork when done, allow to sit for 5 minutes while potatoes cook until golden

Step 6

Fry the shallots off until crispy and add the brussel sprouts and toss for a few minutes until hot

Step 7

Slice the pork and serve with vegetables and the cooking juices poured over
