We use our own grass-fed, dairy-bred organic beef which has it’s own glorious story here to magic up a delicious modern version on a very very popular old classic. An artisan, hand-crafted product – cured, slowly cooked for 12 hours in it’s own broth and then hand-pulled and pressed into terrines. A truly flavoursome deep, rich, buttery corned beef.
This corned beef is very different to a tinned version – yes, you can still slice it easily but it has a lovely rich crumbly texture too that makes it a very versatile and an incredibly tasty store cupboard essential … delicious and ready to use. Ideal for salads, sandwiches, snacks, parties, picnics and hearty lunches. No tin – no key – no cut fingers (if you’re old enough to remember!).
Part of this wonderful story is that this product allows us to raise dairy-bred, grass-fed beef animals profitably – steak cuts and mince use only part of the beef carcass and they are popular family essentials. Corned Beef is made from less popular whole cuts, such as brisket, that respond beautifully to being slow cooked producing tender, rich & buttery beef.
